Sunday Eats

Finals are upon us! Wish us luck! 

So a little about life lately... or you can skip to the awesome food at the bottom lol.

Well, we might need that luck especially cause I kicked a stool on accident in the print lab and broke two toes all crazy like. Then proceeded in my 12 hour no-break printing frenzy standing on them dang toes.... and sick.....lol! That's what I get for not wearing my brace.

Good thing we are done with Insanity! That's right, you heard us! Done with Insanity, the 9 week program :D We both are going to take our pictures soon and post them! We are doing hip hop abs for the next two weeks as finals are happening (and it's less intense on my toes) then starting Insanity all over. Yes, we are insane thank you ;)

We actually were kind of freaking out because this fall, we apply to law and nursing school! We finish in April, but will hear most likely in the winter where we will head out to.

 I might wait to apply until Austin chooses a school though, and look for community college that offers RN. (If you are wondering if I am quitting art, I would never do that. I simply and protecting myself with another passion and degree because my dystonia may spread to my right side that I use in art. I want to help people like myself in the medical field. And possibly do art therapy)  I found out that if I get my associate's nursing combined with the BFA I already am getting, it counts as an RN apparently. Anyway if anyone knows about that, you should definitely let me know! 

Austin did really well on his LSAT and some schools say they can offer a full-ride or some scholarships...tempting, tempting! I'm so excited for him no matter what he chooses. He keeps teasing his ER doctor dad though that he's going into malpractice ;) I'm pretty sure we'd be the least favorite childrens in the family. 

Two more weeks and we are also headed out to Wyoming for our first of the break! Hillary (Austin's sister) has a wedding soon. We are so excited for her. I never thought pinterest would be something I cared that much for but planning a bridal shower.... I'll admit it's loaded with great ideas! I maybe thought that was the limit for me with the whole pinterest thing, and then I happened upon rolled up chicken with herbs and cheese. 

I put my own spin on it, used olive oil, thyme and oregano, a lighter cheese, turkey bacon (non-sodium filled kind), and sautéed mushrooms inside. Then a little garlic salt on the outside, and out to the BBQ we grilled! Austin added some wilted lettuce to our dinner (family recipe, I don't think I can share!) It tastes so much like a desert... so tastey! Add some rice and roasted garlic green beans... blam it's a feast!

    1. Yup! It could be occupational therapy or dietetics still. Instead of grad school for art, I thought I would pursue another passion. I might lose my right side to dystonia, so it's another safety net just in case.

The Last Stretch

I am on the last little stretch before the surgery! It's amazing how in denial I can still be, thinking that I do not have anything wrong. But then you get a wake up call when your body does funky things you can't stop, and then you fall down the stairs twice. Once I popped my shoulder, and the second I popped a hip and broke my back molar coming down on my side. So I got that tooth fixed ASAP, thank the heavens it didn't damage any roots! At the dentist my mouth was opened for an extended period of time, and needles were involved. Just when you think you have this whole Dystonia thing under control.... another reminder! I got lock jaw while working as a floor nurse! My jaw had increasing pain through the week, and I revisited the dentist. Nothing wrong with my tooth. At work, it sealed shut (and not to be gross) but when you have an intense cramp like that, it causes immense pain. I do in fact throw up sometimes from the pain. Well if your mouth seals... and tons...

Call Me a SAHM in Training

Stay at Home Mom (SAHM)  Besides a medical leave and two maternity leaves, I’ve always been a full-time plus on call nurse mom. I am now almost two months into being a SAHM and I would have to still say I’m training! A lot of you have told me routine is so important, and I’ve been trying my darndest to do that. We do library time or errands in the morning, naptime and quiet time after lunch, and art and outdoor/indoor active  play until dad comes home! Some days it blows up in my face, much like what we’d call a s-tshow at work, haha! Except these are my monkeys and my circus! But mostly because I am learning and loving it, too. I struggle with anxiety and depression. Ever since I was little. My post-partum depression with R was so difficult. I am so lucky to have an incredible husband and health team that honestly kept me alive during that time. Luckily, I was treated prior to giving birth to A too because a) it was known I get PPD and b) it’s better and easier to tr...
